Coprinus comatus

Coprinus comatus is widely available in Central Europe and is highly valued as an edible mushroom because of its delicious asparagus flavour. The mushroom with the small white pileus belongs to the Coprinus family. This type of mushroom has a relatively short lifespan. As the mushroom ages, it start to disintegrate on its own: the mushroom cap turns black, forms ink-like droplets and eventually disintegrates. This type of mushroom has a relatively short lifespan. Shaggy ink cap has about 30% raw protein with 20 free amino acids when dried. The mushroom also contains potassium, magnesium, iron, calcium, zinc, copper and vanadium. Vitamins C, B-3 and B-1 are also important components. What’s more, Coprinus comatus is low in sodium.
