Highly valued in China for the last 2000 years, Polyporus umbellatus is now used around the world for nutritional and medicinal purposes. With several hundred mushroom caps growing in dense clusters, the oyster mushroom has an impressive appearance and thrives in moderate climates in Europe and Asia. It grows out of a pre-existing resting body of the mushroom, called a sclerotium, which is a dense mesh growing just below the surface of the soil, and it is capable of growing over and over again. The sclerotium holds a high concentration of the mushroom's components.

The concentration of substances is especially pronounced in the sclerotium of Polyporus umbellatus: the components include minerals such as calcium, potassium and iron as well as trace elements such as copper, manganese and zinc. Also included are ergosterol, biotin, niacin, folic acid and retinol and specific polypeptides and polysaccharides.
