Properties and ingredients of the shiitake mushroom

Shiitake, also known as Lentinula edodes, is a highly prized medicinal mushroom with thousands of years of tradition in Asian medicine. The mushroom grows in the deciduous forests of Japan, China and Vietnam – mainly on dead tree trunks. Shiitake is a very popular edible mushroom, but of course we’re more interested in why it’s so popular in Traditional Chinese Medicine as well.

The mushroom contains all the essential amino acids and many important minerals such as iron, potassium, calcium, and zinc, which are important for bone health, muscle and nerve function, and oxygen transport in the body. Shiitake is also a natural source of several vitamins, including B vitamins (especially B2, B5 and B6) and vitamin D2, which play an important role in metabolism and the nervous system.

What makes shiitake so interesting, however, is its high concentration of the beta-D-glucan lentinan, a type of polysaccharide, that is known as a “biological response modifier”. Another interesting vital substance in shiitake is eritadenin.

Shiitake use cases in research and practice

Also conventional medicine is interested in shiitake because of lentinan. Its role in strengthening the immune system and preventing bacterial and viral infections has been studied a lot. Shiitake is also often used to regulate the metabolism of fat and to prevent osteoporosis.

Capsules

In addition to the mushroom extract or powder, the capsules also contain organic Acerola extract, which has a very high vitamin C content. Studies have shown that vitamin C significantly improves the absorption of the ingredients in medicinal mushroom extracts.

The capsule hull is made of hydroxypropylmethylcellulose, so it’s completely vegan.

Cultivation and growing material

We grow our mushrooms in their natural habitat, the Chinese highlands, and rely on the expertise of local farmers.

The growing material used to grow shiitake consists of 78% sawdust mix (oak, maple, birch, poplar), 20% organic wheat bran, 1% cane sugar (conventional quality and 1% natural gypsum.

The organic production is done according to the actual valid EU regulations.

Food grade status

The products are suitable and safe for human consumption according to actual EU regulations (178/2002). According to the EU’s Novel Food Regulation (2015/2283), shiitake extracts and powders can be used in foods or beverages or as food supplements. You should still contact the appropriate authorities in your country to ensure that you can market and sell our raw materials.

Packaging

Powders and extracts are available in 1 kg, 5 kg and 25 kg containers, capsules in either 2000 or 5000 pieces/bag. All orders of 1 or 5 kg are packed in PE bags in a bucket, 25 kg orders come in a paper drum. All packaging that comes in contact with the edible raw materials comply with actual EU regulations.

Production methods

Extracts: Grinding mushroom fruiting bodies, metal detection, hot water extraction, centrifuging, spray-drying. Extraction ratio (indicative): 10:1 – 12:1. We standardize the polysaccharide content of the extracts at 30%.

Powder: Grinding mushroom fruiting bodies, metal detection.

Capsules: Weighing of the raw materials (powder or extract), mixing of the raw materials, encapsulation, cleaning of capsules.

Shelf life and storage conditions

For extracts and powders: 4 years when properly stored: at room temperature or lower, in a tightly closed package that keeps the raw materials protected from light, humidity and insects.

For capsules: 48 months after production date when properly stored: at a dry, cool place (room temperature or lower) and protected from sunlight.
