Brief profile:

Originally, Maitake was a common and popular edible and medicinal mushroom in Japan that grows on tree roots, primarily old oak roots. With its large fruiting body consisting of many small grey to grey-brown felt caps, the mushroom is able to perfectly blend into its environment, making it difficult to detect in nature. The mushroom, which is also known under the name hen-of-the-woods, has a pleasant taste with an intense mushroom flavour, and is now also cultivated in North America and Europe in addition to Japan.

Besides minerals and trace elements such as iron, zinc, potassium and magnesium, the Maitake mushroom is particularly rich in ergosterol. It also contains riboflavin, niacin, thiamine, biotin and folic acid. However, the mushroom is particularly valued for its ß-D-glucan-type polysaccharides.
